This Keto Big Mac takes everything you know and love about the classic double-decker and rebuilds it low-carb, without cutting a single corner on flavour. Same creamy sauce, same pickle-and-onion crunch, same "why do I want three of these" energy, just without the bun-induced food coma afterward.

Instructions

  1. Whisk all the sauce ingredients together in a bowl.
  2. Cover and pop it in the fridge for at least 30 minutes, this bit's non-negotiable, the flavours need that time to properly come together.
  3. Divide your beef into four portions and shape into very thin patties, thinner than you think.
  4. Heat a large frying pan or griddle over high heat.
  5. Season the patties and cook for about 2 minutes per side.
  6. Add cheese to two of the patties during the final minute so it melts down properly.
  7. Lightly toast your low-carb buns.
  8. Spread sauce over the bottom bun.
  9. Layer on lettuce, a beef patty, onion and pickles.
  10. Add your middle bun, more sauce, the second patty, more onion and pickles.
  11. Top it off with the top bun and eat it immediately, this is not a burger that waits around.

Skip the bun stacking entirely and make it a Big Mac bowl. Chopped lettuce as your base, patties and cheese on top, pickles, onion and sauce all over, finished with a sprinkle of sesame seeds. All the flavour, none of the assembly.

Throw on extra cheese, crispy bacon or a fried egg, don't ask questions, just do it. For a next-level bun, toast the inside of your low-carb bun in the same pan you cooked the patties in with butter, all that leftover beef flavour soaks right in.
